Naughty but nice cakes

This week was a lot of fun.
First cab off the rank was a beautiful chanel clutch handbag cake.
This was backed up by a Aussie Day BBQ cake

Then the week finished with a Naughty Nurse cake


Flavours included. White chocolate mud, with raspberry compote and milk chocolate ganache, & Dark chocolate mud with chocolate mousse filling and dark chocolate ganache...

Next week is going to be fun as I recieved a phone call yesterday for a cake for next weekend... A WEDDING CAKE.

A weeks notice to make a wedding cake, most other cake shops would probably not be able to achieve this, but because We bake everything fresh, and never freeze anything it makes no difference to my production line... :)

PS. I got asked for advice with using fondant so I decided to post my reply to help you all out.

QUESTION
"how hard is it to use fondant?
I have a rectangle slab cake in the freezer i was planning to use for birthday cake

ANSWER
fondant is not "hard" as such to use... here are my tips...
1. Roll it out on icing sugar to stop it sticking
2. dont try and colour white fondant red (it will go pink) use ready made red fondant
3. You dont want it more than 5mm thick once rolled out.
4 make sure the cake is smooth with buttercream or ganache (ganache is harder to get a really smooth finish but boy tastes great)
5. after the cake has been buttercreamed brush lightly with some water or sugar syrup 1pt sugar 3pt boiled water.
6. when attaching the fondant to the cake make sure you secure corners first, to avoid tears.
7. use a cake smoother to smooth and secure fondant. if you dont have, use greese prrof paper and your hand, then go with a piece of fondant in your hand lightly dipped in icing sugar and use that to smooth your cake... works beautifully.

Designer bags and wedding tastings

This week started off quiet, but of course nothing is ever quiet when it comes to cakes.

So on Thursday met a lovely bride to be, and gave her a cake consultation and tasting.
The flavour was white chocolate mud cake, layered with white chocolate ganache and raspberry compote.

So then having already made a cake I decided that 1 was just not enough.
So decided to venture on to make a handbag cake, which was turned into another facebook compettion to win it.

The LV Handbag was soooooooooo fun to make, and I loved how it came to life. All it needed was a designer shoe, some makeup, and jewellery and it would of been everything a woman could want... Whats not to love about cake and designer labels in the same mouthful.



This week coming up is going to be a blast, with 3 awesome cakes to make.
Starting the week off with a designer chanel clutch bag (wow designer fever).
Followed by the great Aussie dream cake a BBQ cake complete with snags for Australia Day, and of course one that I'm very excited to make a naughty nuaghty nurse cake... ;o

CAKE WINNER...

This week was a quiet week in cake making...
However there was one very exciting competition... to win a copy of this cake (shown below) in whatever colour you would like. (As I will be making it in march, for a class at http://www.cakedecoratingcentral.com/)

Lots of entrys... but there can be only one winner...

It's not a house it's a home...

So another week has passed us by.
This weeks highlight was definately the making (and delivering) of the 3d house cake.
It was for the family get together, and consisted of vanilla butter cake, layered with milk chocolate ganache, coated it dark chocolate ganache, with pieces of chocolate fondant to make the bricks, the tiles on the roof were airbrushed to give it a terracotta feel.

So much fun.

So here is a picture of what I THOUGHT was the finished product.


OH OOOOH... Then I looked at the picture of the house staring at me from the computer, looked at the house model I made out of cardboard, then I looked at the clients email she sent me, then I looked at the picture she sent me... and I realised instantaneously that I had forgotten the windows, and the back step on the house and the plaque on the front of the cake... and the most important the dad sitting with his son... (obviously this realisation was very quick, and this is exactly why I double and triple check everything.)

So below is the finished cake in all its homely glory...






I loved many aspects of making this cake, the airbrushing, making the tiles, the "unfinished" area waiting to be tiled, the children playing on the lawn, but I have to say it touched me seeing the dad on the roof with his arm around his son. It reminded me of my very own dad, whom I shared so many fun memories with as a child during the renovations of our own family home.

Anyway as it famously quotes in the great Australian movie "The Castle"... "It's not a house it's a home."

New Year... New beginings

Wow, after a busy 2010, 2011 is already looking to get fired up.

Cake orders have come in for January, February, May, July, August, September... and January 2012.
Phew... who ever would of thought that this would ever be possible. So starting the New Year,I would like to thank all my family, friends, and all my customers new and returning. Without you I would not be where I am today, and I am humbled and blessed.

The New Year also brings about the desire for change and new things, So here is my new blog, with a link to my new twitter account, and the webpage need not feel bad as its getting a whole new revamp as well.

This week I endevor the challenge of making a replica of a house for a special client Maria.
Im excited by this cake, as I love challenges, and I love to create.

Here is a sketch of the house I'm making this week...



Starting this blog I would like to post my top 5 cakes/ cupcakes/ cookies of 2010.

5. My hubby's (not quite a suprise) 30th Birthday cake. This was made between the hours of 2-4am for his suprise party... but he was to clever he already knew that a party had been organised.

4. Katherine & Albert's wedding cake. This 5 tier cake was all fruit cake, and was HUGE, it was heavy to deliver and set up, but I loved it because I learnt so many things from making this cake... oh and it looks beautiful as well.


3. Everyone loves the festive season, and I loved these cupcakes. Little Christmas puds, a Santa belly, cheeky elves, and Christmas baubles... The children loved these, and because they loved them so much, I loved them to.

2. Making these cupcakes with a very talented young Josh was so exciting.
He is a passionate and very talented student, who I'm sure will be very successful oneday in all his cake endevours.
I love these cupcakes because they are a reminder that its never to early or too late to start living your dreams.

1. ... But the no.1 spot has to go to ... My very own wedding cake. Of course I'm completely biased, but it was the best day of my life, and everything in it.
